Happy Thanksgiving! Oh I just finished eating... I feel FAT... but I feel good. :D

I'm thankful for the roof over my head.
I'm thankful for my family... & pet's. :p
I'm thankful that I have clothes to wear & good food to eat.
I'm thankful for god's grace.
I'm thankful god doesn't kill me right now.
And I'm thankful for the state of Texas! :p

Just a joke... but I do love Texas. :p

Happy Thanksgiving all! I'm stuffed...with actual stuffing. he he he

Alas! My mom did not prepare any mince pie this year. I am sad and waxing melancholy. Apparently not only did the stores not carry any mince pie ingredients (Maternal Unit usually makes it from scratch) this year but to top it all off Mrs. Smith (a commercial frozen pie manufacturer) didn't send any to the stores either. Bah!

Mince pie is Thanksgiving!

But I'm about 30 lbs. heavier than I was this morning, so all is well in the end. :-o

I think they are made of a chopped mixed dried fruit composition cooked in little short pastry patty cases, with either latticed or solid lids. They are usually available at Christmas, as something extra to eat, but I'm not quite sure why.

They are not to be confused with the ordinary Aussie meat pie which is meat and gravy in a standard flaky pastry case, is terrific with tomato sauce and which can come in plain, steak and kidney, steak and mushrooms, steak and peas, curried beef, beef mexicana and chicken varieties.

This Thanksgiving wasn't not very fun, I had the flu. :-s It was really sad. I didn't get to eat much of anything. I was sick all day long.
But I'm thankful for:
My family
My Friends
Jesus
Church
Singings
A bed
Clothes
Food

What exactly is mince pie?

Well, that's difficult to answer because I'm not quite sure of all the ingredients myself in a traditional Mince. There's apples and raisins, and sometimes I could swear there's some pears in there as well, but everything is chopped down to a "minced" quality (not in big chunks like your standard apple pie). There's a ton of spices in it, everything from sugar and cinnamon to possibly nutmeg and other such things. It's a very traditional "Yankee" style Christmas pie. But from my understanding it didn't start in the Northeast US, it was actually a creation of Great Britain. From what I've been told Mince Pie started out as a way for bakers to use leftover fruits and stuff that had...um...just started to go bad. hehe

So they figured if they could chop the stuff fine enough and overload it with sweetness and lots of spices and cook it good people would still eat it, and this proved to be the case. Nowadays they don't put bad stuff in there but it tastes awesome. But it's a very acquired taste and a lot of people don't like it when they first try it. It's not usually in stores until around Thanksgiving and Christmas. It also goes really well with a big dollop of whipped cream on top, but what doesn't? :D

It tastes like an apple pie on steroids. I cannot put it any other way.

On friday when I went to my dad's side I was planning on not eating much, but, that didn't happen. ;) Was a great day.

LOL! ;) Sounds like something my brother would say. :D

We had a great Thanksgiving. I made a mixed berry pie and since we ran out of pecans, Scarlet made a chocolate cream pie. So, we had three pies this year. Thrice the goodness - what else can I say? :) And of course, lunch was delicious.

I'm thankful for...
