Have I posted this link in here before? I'm not sure I have. Here's the list of timers for The Forbidden Grove, Balack's Cove, and the Seasonal Garden (as well as some other info on the game's events).
I've been avoiding heading into the Acolyte Realm, but I'm not sure why. So what exactly happens after the forbidden grove closes, and one catches a realm ripper. . . I'm a bit confused by the whole process. Are there any other mice in the acolyte realm other than acolyte mice?

Yep, lots. Most of them you can catch in the Forbidden Grove, but the new ones include the Acolyte (which you know about) and the Lich and Wight Mice.
Next on my to catch list: Tiny, Mole, (if I'm lucky) Farmhand.
The Tiny Mouse and Farmhand Mouse both require superbrie to catch, just so you know. The Mole Mouse is extremely rare and while it can be caught in the Meadow, I'd recommend holding off until you get to the Town of Digby where it is slightly less rare.

Do these guys require any particular bait, or trap setup in order to catch, or can I nab them with ACRONYM and Ancient cheese?

Ok, this from memory so hopefully I'm remembering correctly....
Acolyte Mouse - Runic Cheese/Ancient Box Trap
Lich and Wight Mice - Runic Cheese/Ancient Box Trap or ACRONYM
Gate Guardian, Golem, Gorgon, Sorcerer, and Specter Mice - Ancient or Runic Cheese/Ancient Box Trap or ACRONYM
Mutated White and Gray Mice - Radioactive Blue Cheese/Ancient Box Trap or ACRONYM
Now what I don't remember for sure is if all those mice in the third row are actually attracted to Runic Cheese. But it's close enough to give you a pretty good idea of what you're getting into.
How's your Ancient Box Trap coming along DiGs?
I think it's coming along nicely, FK (considering the interruption of the festive comet of course) I've got two of the four blue-prints, and have a decent stock of cheeses once I get back to the tribal isles. I also have enough gold saved up to purchase the Gorgon Trap (assuming that Ronza doesn't drain me), so I should be able to get all of the necessary components out of the Jungle of Dread rather quickly (I hope!).

I thought it might be helpful to post a list of mice that are only attracted to SuperBrie, especially for the newer players. That way you all know when to bring out your precious stash.

Windmill - Flying, Farmhand, Speedy, Silvertail, Tiny
Harbour - Fog, Magic, Silvertail
Mountain - Fog, Pebble, Silvertail
Town of Digby - Nibbler
Bazaar - Nibbler
Training Grounds - Nibbler*, Worker, Dumpling Chef
Dojo - Worker
Great Gnarled Tree - Nibbler
S.S. Huntington - Cook, Nibbler
Cape Clawed - Nibbler
Seasonal Garden - Spring Familiar, Fall Familiar
*I believe this is the best location to catch the Nibbler. Second best is the Great Gnarled Tree.

Wait. . . I thought that the Black Widow was only attracted to SB+? If she's attracted to something else (as she isn't on your list, FK) then what am I doing wrong?

The Black Widow is extremely rare. Rareness goes in order of Leprechaun, Mobster, the three Prize mice, the Black Widow. I played the game for well over a year before I caught my first one. They seem to be most prolific in the Tribal Isles but you can catch them elsewhere.
I was wondering if the devs had released a new batch last week as Bookwyrm, Pheonix, and qwertykate all caught their first Black Widow Mouse (and I caught my 8th).
I leveled up to Initiate and I caught my first Pirate Mouse I also got two more Bronze Crowns...
