This thread is so interesting!
Some vegetables I like raw, but not cooked. For example, in my book, onions and carrots are delicious raw, but nasty cooked. I hate how onions get all slimy and carrots get all soft. The best part of a carrot (the *CRUNCH*) is gone! How could I like it?
I forgot to mention that whenever my mom brought a rutabega, my sisters and I would hide it in the very back of the fruit drawer, usually under the bag of lemons. Then she would forget about them.
Unfortunately, this became a problem when she kept buying rutabegas and the lemon bag was not large enough to hide them all.

^lol I do the same thing too with some foodstuffs my mom buys. The only problem is it's my chore to clean out the fridge
There are some veggies I don't enjoy but I'll eat them if I have too. There are some I absolutely dislike.
I don't like: Chinese cabbage, Brussel-sprouts, purple onion, squash, pumpkin, sweet potato, zucchini, beetroot, turnip, parsnip, eggplant, broccoli stems (I enjoy the heads) etc.
I enjoy most other veggies. Especially carrots, capsicum, avocado (especially with Vegemite on toast, or as guacamole), lettuce, chilli, mushroom, celery, onion, potato, peas and beans, garlic and tomatoes.

Avocado is definitely on my dislike list. And guacamole...yuck-o-rama!

Haven't gone through all the pages of vegetables being bashed-- but for the most part, I love all vegetables. (With an exception of brussel sprouts, but I can't say, because I've never tried them.) I love tomatoes, Swiss chard, collard greens, cooked or raw brocolli, peppers! (sweet and hot type), potatoes, spinach, avocados (only fresh, though), mushrooms, okra, eggplant, long beans, cauliflower and basically all that you could name. (And, did you know that leafy, green vegetables help you with necesarry protien, nutrients, and everything? Eat it! *puts off wannabe Nutritionist attitude* )
The one thing I cannot stand is cooked onions. It takes a lot to make me swallow the squishy, icky thing and disgust me to touch it.
After that it's cooked tomatoes. I don't mind them roasted or whatever, but when they're boiled along with something, they just aren't my favourite thing.
My one defense is that vegetables are more nutritious when not cooked, so it's not mandatory for me to eat these.
Then beets come next in line but really, it's only the minority that like beets.

My most hated vegetables are lima beans, brussel sprouts....they make me sick to my stomach! Squash, beets, tomatoes...not for me!!

@PattertwigsPal: That's awful that you're so allergic to peanuts!! And to have had such a reaction and not have an epipen... *shudders*. I'm not severely allergic to anything, but recently I got told that the allergy board wants all of my doctor's patients to start carrying around epipens, no matter how severe their allergies are. At first I felt really stupid having to carry around an epipen, but now I'm kind of glad. Hope I never have to use it!
As for disgusting veggies, I used to have a lot that I didn't like, but over the years I've grown accustomed to them. Squash is definitely one of them. I still have to choke it down, although it's not as bad as it used to be. Yams is another. Guess they reminded me too much of squash... And beets. Yuck. I think I tasted them once, because my dad wanted me to try them. He's been pickling them lately, and the smell makes me want to vomit! Our house would smell like dirt and other nasty smells. I used to hate zuchinni, but now I've actually developed a taste for it. Same with cucumbers and fresh spinach (I've never tried it cooked. Probably never will. Looks too unappetizing). Now I love them! But, yeah. I don't think I'll ever like squash or beets. I feel queasy just thinking about them.

I like most vegetable execpt brussle sprouts and peas and avacado( the worst of all they taste so goss). Their is no vegetable that i just can't eat though. There are more meats thaqt i just can't eat without choking.
edit: i just tried squash for the first time tonight and it was really nice. Mixture of pumpkin and zukini
I love peppers, onions, peas, carrots, spinach, asparagus, etc.
The only veggie I refuse to eat is squash. Not even on Thanksgiving. It's just too gooey.
Oh, and I can't eat avocado; I'm allergic to it.

Well boy this thread went off on several fun directions since I last peeked in.
First of all, a couple comments to Pattertwigs Pal. Did you know they're finding that people who are allergic to peanuts are now being treated by continual exposure to peanuts? In a controlled situation of course. I don't know if that would work for you since your body has already developed a pretty severe reaction, but young kids who are showing signs of peanut allergy can be treated. You might look into it.
Also, I couldn't help but notice your comment on baked beans!!! If your only experience with them is from a school cafeteria where they probably popped open a can, then I can't blame you for hating them... blegh! However, I don't know where you're from, but if you ever get a chance to go to a barbecue of any kind, try some baked beans there. They'll taste nothing like what you'd get from a school. I love baked beans, but I won't go near the canned kind.
And speaking of canned veggies.... I'm sure I'm be made fun of for all eternity for saying this, but I prefer canned green beans to fresh. Yes! It's true. But with good reason. My parents were hardcore green bean growers when I was little and my dad would let them get HUGE before picking them. Then he and my mom would can dozens of jars of them (which in turn we'd eat all year round). The problem is (as I only learned a couple years ago), when they get that big, they become really, really stringy and lose a lot of the flavor. I have had fresh green beans that are amazing, but I've never been able to duplicate it with my own green beans and my taste has adapted to the canned kind. Make fun all you want.
Oh, and another confession.... I like a lot of my veggies cooked to mush. Not all mind you, but peas, corn, broccoli, green beans, squash (it's called squash for a reason!).... the mushier, the better! On the flip side, some of the nastier things are cooked spinach and peppers. Onions can go either way for me (I'm surprised to see all the cooked onion haters on here. Normally it's fresh onion haters I run into )
Aren't baked beans a staple of camping too? To be sure, the BBQ ones sure beat the kind from a can.
On canned veggies: canned spinach is, in my opinion, horrendous. *cringes at Popeye* It's the only kind I had growing up, but fortunately my parents didn't make me eat it since I eat just about everything else. But spinach picked fresh from the garden is a whole different thing.
And apologies to the sauerkraut lovers here, but I just can't abide it - or that terrible smell. What a thing to do to cabbage! Still, to be fair, my experience with it might be just like the baked beans example above; I've never been around the homemade variety.
Definitely agreed about the green beans, fantasia. The big ones from the garden are hard to swallow.
(I like onions and sweet bell peppers sauteed - like that wonderful fajita aroma you get in Mexican restaurants. Mmmm...)

Btw I don't like baked beans. Not even homemade, although I tolerate those. Part of the reason is I hate ketchup and it reminds me of ketchup *blech*
Really the only "vegetable" I don't like is lima beans. *shudder* They're disgusting. I remember being forced to eat them as a kid..my mom's all like "You can't leave the table until you eat them!" So I would just sit there all afternoon...until they finally made me go to bed early.
