I have been thinking about this for a while, and even though i've seen pretty much every concept art piece there is going (i've got quite an extensive links collection if anyone is interested), i still think that if pushed for an absolute favourite, i would have to go with one of the very first concept art pieces we saw, and something that pretty much everyone will have seen:

I think the main reason why i love this piece, and alot of the other early LWW pieces, is that they really give an impression of how much better the film could of been on a visual/cinematic level. With Prince Caspian i feel the movie managed to capture the essence and mood of much of the artwork perfectly, and so whilst i love much of the artwork pieces, they don't quite have that same sense of missed oppurtunity that i get from the LWW pieces.
That piece i linked above with Aslan standing on the rock, and Peter, Susan and Lucy meeting him for the first time in particular gets me dreaming about what could of been. I love the way Aslan looks so regal and majestic, standing on a rock high above the others, but still surrounded by his loyal Narnians. That picture is everything that Aslan should be to me in one defining image.
What we got in the movie however was Peter, Lucy and Susan kneeling outside a tent, waiting for Aslan to come out and meet them. Like what was Aslan doing in a tent besides sleeping? He's a lion, its not like he was busy doing his paperwork or anything. The entire set up for that scene just irks me, and gives the entirely wrong impression about Aslan. He's not out amongst his people like he is in that concept art, but he is instead sitting in his tent on his own away from everyone else. It just makes him seem detached and impersonal.
One can only imagine what made them decide to abandon such a beautiful peice of imagery as that depicted in that concept art, but if the movie had just managed to convey even a hint of some of the rich, real, living breathing Narnian world depicted in much of the LWW concept art, i would of liked the movie a whole lot better.
I like this one best:

I actually have a painting in my house in this similar style. My brother has the same one. But to him it simply reminded him of the old country. To me, it reminds me of the Telmarine city in Narnia as well.
It looks like a lovely town in the Mediterranean- with the cobblestones and the clay roof tiles and the arches. OK, so my condo complex has all of those
